At just 29 years old, Laure Etiennot is taking the helm at Loma Restaurant with a clear vision and a cuisine full of character. Modern, bold, and refined, her culinary signature reflects a demanding journey and a passion that began at a very young age.
When did you realize you wanted to become a chef ?
Pretty early on. Cooking has always been a means of expression and creativity for me. Very quickly, I felt the desire, almost the need, to share my passion, whether with my teams or with customers.
What were the major milestones in your career before you arrived at Loma Restaurant ?
I first attended a culinary school, then built my career at some of the finest establishments. There, I learned discipline, precision, and respect for the ingredients. Each experience allowed me to refine my culinary identity.
How would you describe your cuisine in a few words ?
Modern, precise, and bold. I love contrasts, bold sauces, and surprising combinations. I’m always seeking a balance between French cuisine and flavors from other parts of the world.
What are your main sources of inspiration ?
Family meals, encounters, and sharing.
In your opinion, what are the essential qualities of a good chef today ?
Diligence, creativity, and above all, humility.
How important are fresh, seasonal ingredients to you ?
They are the foundation of everything. Each season offers the chance to explore new flavors and textures.
What ingredients do you particularly enjoy working with, and why ?
Fresh vegetables and herbs. I love turning simple ingredients into flavorful bites.
How do you create a new dish ?
Always starting with a base ingredient, then adding a condiment, a touch of acidity, a delicious sauce, and a little something extra !
What emotion do you want to evoke in customers discovering Loma ?
Surprise and delight.
How do you envision the ideal dining experience ?
A relaxed, unpretentious moment. Precise yet accessible cuisine. Guests should feel at ease, while still being surprised.
What would you say to someone who has never been to the restaurant ?
Come without any preconceived notions. Let yourself be carried away. We’ll take you on a journey !
